FOOD & WINE
Taste is the foundation we work from, as that is ultimately what distinguishes wine from other drinks. The complexity of possible tastes in wine is at times baffling and beguiling. What we share during our walks are real tastes derived from things grown without chemicals and produced without additives. Seasonal, local vegetables, exquisite cheeses, and real bread accompany and complement the natural wines we serve.
CONSCIOUS CONSUMERISM
The world has been slowly awaking to the environmental impacts of what we consume, which has led to raising awareness about single-use plastic containers, packaging, organic versus conventional agriculture, travel, energy, meat, fast-food, textiles, and the consequences of these choices on global warming. We have been consuming consciously since we began and strive to encourage others to do so through taste.
IVRESSE
The French word for ‘drunkenness’ has much richer connotations than its English counterpart. ‘Ivresse’ includes drunkenness, but also implies a spiritual state as in Baudelaire’s poem, ‘Enivrez-vous’, where he affirms that we should always be drunken, “with wine, with poetry, with virtue, as you will”. Of all the alcohols, (real) wine is distinctive in the euphoric, spiritual uplift it can provide.
